INGREDIENTS FOR BACON KIMCHI FRIED RICE:
4 slices of thick cut bacon (cut into bite sized pieces)
2 cups Kimchi (chopped)
Gochugaru (pinch)
Salt/Pepper (pinch)
2 cups cold cooked rice
2 green onions (chopped)
1 Tbsp Butter
2 eggs
Sesame Seeds (for garnish)
Sesame Oil (for garnish)
FOR CHEESY EGG VOLCANO:
4 Eggs (beaten)
1/2 cup water
1 Tsp salt (I recommend using less it ended up being slightly salty)
Mozzarella Cheese (amount to liking)
RECIPE:
1. Heat pan (high heat) and add bacon
Cook till the edges are brown (about 3-4 minutes)
2. Add kimchi and stir fry for another 3-4 minutes
3. Add seasonings (gochugaru, salt, pepper)
4. Add rice and mix in pot for about 2 minutes
5. Beat Eggs for volcano mixture
6. Melt Butter and then place kimchi fried rice into middle of pan (turn off heat) and form into volcano shape using spatula (you can use gloved hands but the rice is hot!)
7. Return it back to stove and put the heat on low β medium
Make sure to use a pot that is good with non stick! No stainless Steel!
8. Pour volcano mixture through the kimchi fried rice as if itβs erupting!
9. Add mozzarella cheese on top of the egg mixture only and a little bit on the kimchi fried rice (not too messy)
10. Cover and let cook for about 5 minutes (check on it periodically) Once the egg is firm the dish is done! Garnish with green onions, sesame seeds, and sesame oil.
