Dahi Vada Recipe Dahi Bhalla Recipe | होली पर दही बड़ा रेसिपी | Holi Special Recipes

Dahi vada is a popular Indian street food. The vada prepared from urad dal is deep fried and then served with curd/yogurt and tangy chutney. Pudina chutney and Imli chutney are used as toppings in North Indian Style dahi vada recipe.

oil for frying
1 bowl urad dal/split & dehusked black lentils
(soak the lentils overnight in water. next morning grind it to a thick coarse consistency with very little water)
500 grams dahi/yogurt, whisked lightly till smooth
imli/tamarind chutney as needed
pudina/mint/green chutney as needed
pomegranate pearls as needed
1/2 tsp deghi mirch/red chilli powder
1/2 tsp table salt
1 tsp coriander powder
1/4 tsp kala namak/black salt
roasted jeera/cum powder as needed
1 tsp ginger paste
1 tsp garlic paste
8-10 kishmish/raisins
hara dhania/cilantro, as needed

1. rest the urad dal after grinding for 1 hour
2. to this now add the ginger & garlic pastes, raisins, red chilli powder, coriander powder, kala namak, table salt & some hara dhania
3. hand whisk the mixture for 4-5 minutes till fluffy & keep aside
4. keep kadahi/wok on medium heat. add oil & let it heat up
5. when oil is hot reduce heat a bit & make the vadas (in batches of 3 or 4) & fry them till golden on both sides (see my way of making the vadas in the video). adjust heat as needed
6. when all vadas are made dip them in a bowl of warm water for 5 minutes
7. now squeeze out the water & arrange the vadas in a broad dish/bowl. pour the dahi all over the vadas. then sprinkle black salt, table salt, red chilli powder & roasted jeera powder on the dahi
8. spread green chutney & tamarind chutney on this as needed and finally garnish with some pomegranate pearls & hara dhania
9. Serve immediately

add the dahi when ready to serve as the vadas will absorb the dahi if kept for long. use chilled dahi or chill the dish for about 30 minutes before serving.
