Find out how I made this huge plate of food for under $3!! 100% Organic and vegan. This dinner is part of an experiment I am doing where I see if I can eat 100% organic food for one week on a $50 budget.

Vegan Dinner for Under $3:
1/4 bunch Asparagus – Bake at 375 8 minutes
1/2 Sweet Potato – Boil 15 minutes
1 Large Carrot – Boil 15 minutes
1/4 Sweet Onion – Saute 5 minutes
1/4 cup Quinoa – Simmer on Low covered 15 minutes
1/4 cup Lentils – Simmer on Low covered 15 minutes
1 tbsp Olive Oil – For Onion and Asparagus
Salt & Spices – However you prefer 🙂
