I LOVE eggplant and this was actually a request from a viewer! However, when I told some friends what dishes were coming up on HOIA, I got a few responses like, “Ewww…. I don’t like eggplant.”

Perhaps eggplant is one of those “hate it or love it” vegetables but perhaps it’s because you haven’t tried it prepared like this! This is one of my all time favorite dishes! I love it vegan style like this and also with sliced chicken… I may do a future episode with chicken!

And of course, I couldn’t help myself with the eggplant jokes… I mean, elephant (or eggplant, lol!) in the room! 🍆🍆🍆🍆🍆

This is super easy to make and very quick if you prepare all the ingredients ahead of time. Serve immediately if you want the eggplant to remain crispy!
