Protein Balls Measurements
1.5 C Pitted Dates
*Rehydrate the dates by soaking them in hot water for 10-15 minutes. Drain the excess water and puree them in a food processor
2 Tbsp Cocoa Nibs
.5 C Almond Flour
*Add extra almond flour if your mixture is too sticky
1 Tbsp Chia Seeds
1 Tbsp Hemp hearts
1 Scoop Protein
1 Heaping TBSP nut butter
.5 C Shredded (unsweetened) coconut plus more for rolling
Sweet Potato + Arugula Salad
*To poach egg
-Bring a small saucepan full of water to a tepid boil
-Slowly drop egg into the boiling water and lower head to lowest setting for 2 minutes.
-Gently remove egg with slotted spoon to drain on a paper towel
Power Salad Vinaigrette Recipe
1/4 C Grade B Organic Maple Syrup
1/4 C Organic Olive Oil
Juice of 1 Lemon
2 Tbsp apple cider vinegar
Salt and Pepper to taste
