Goji berries are mother nature’s super foods. You’ve heard it before, but it bears repeating. Goji berry benefits could go one forever. They’re full of anthocyanins, which are antioxidants (antioxidants are critical to staying youthful and healthy), they’re loaded with beta-carotene which promotes healthy skin, they boost your immune system … Seriously, I could go all day. Typically, you see goji sold as dried, red berries, but today we’re cooking with goji berry powder, which is the easiest way to eat goji berries (as they usually have a bitter taste), and great to cook with!

Goji Brownies
INGREDIENTS
– 1 stick of vegan margarine
– 1/3 c. xylitol sugar
– 1/2 c. flax eggs
– 1/4 c. coco powder
– 3 tbsp goji berry powder
– 1/4 c. almond milk
– 1 tbsp vanilla
– A pinch of salt
– 2 tsp baking powder
– 1 cup gluten free flour

DIRECTIONS
– Cream margarine and sugar
– Stir in flax eggs
– Add coco powder and goji berry powder, strirrng to combine
– Add almond milk and vanilla, stirring
– Combine dry ingredients, and fold into coco-mixture.
– Spray muffin tin with coconut oil cooking spray.
– Fill muffin tins with batter.
– Bake at 350 for 15 – 20m!
