Incredibly easy vegan recipe, quick, cheap and healthy. Inspired by the indian cuisines, this is one of the recipes I usually cook when I’m a little short on time.

LENTILS ON WATER

INGREDIENTS:

– 1 cup brown Lentils
– 4 or 5 ripe Tomatoes
– 1 medium Onion
– 1 tsp Cinnamon powder
– 1 tbsp Garam Masala.
– 1 tsp Coconut Oil.
– 1L Water
– Salt & Pepper at taste

PROCEDURE:

– Wash the lentils and let them soaking for 8 hours or during the night.
– Cut the tomatoes’ skin and place them in boiling water.
– Cut the onion very thin.
Let them cook on a pressure cooker and add a tsp of Coconut Oil.
Remove the tomatoes’ skin and cut them in cubes.
– Cook everything until they’re soft and there’s almost no water in the pressure cooker.
– Smash the tomatoes and the onion so that you don’t get big pieces.
– Add the Lentils.
– Add about 1 liter of water or a little below the level of the pressure cooker.
– Cover it and let it cook for about 20 minutes,
– After that, let it rest for 15 minutes, and don’t forget to eliminate all the pressure before you remove the cover.
– Add the spices.
– Salt & Pepper at taste.
