THE ORGANIC GHANAIAN CHICKEN SOUP RECIPE

After years of missing this authentic Organic Ghanaian Chicken soup, I managed to prepare some on my last visit to Ghana.

Mum and I visited a suburb of Accra called Nima to source some spices and say a gentleman selling live Chickens.

There are two types of Chicken namely the Broilers that are reared solely for their meat and Layers that lay eggs.
After laying their eggs the Layers are also sold as meat. The Layers are referred to as spent hens. Spent Hens are readily available in most butchers across the UK.
The Chickens in Ghana roam freely and feed on corn. Enjoy this Ghanaian Organic Chicken known as ‘Efi3 Akuko’ (home reared) recipe.

The closest to achieving that authentic Ghanaian Chicken soup taste, is by using the Duchy Organic Chicken from Waitrose.
Please note you can use any Chicken you can afford.
