For Thanksgiving I made this Vegan Thanksgiving Roast. Pot pie with pre-made vegan puff pastry. Three different stuffings inside: pumpkin, mushrooms and cranberries.

VEGAN THANKSGIVING ROAST

INGREDIENTS:

PUMPKIN STUFFING

– 400 gr de Pumpkin
– 1/4 cup Vegetable Milk (almonds)
– 1/2 tsp Cinnamon powder
– 1/4 tsp Ginger powder
– 1/4 tsp Nutmeg
– 1 tsp Garlic powder
– 1 tbsp vegan butter
– Salt at taste

BLUEBERRIES STUFFING

– 1 cup dried or dehydrated Blueberries
– 1/2 cup unsweet Apple Sauce
– 1 large Apple
– 1/2 tsp Cinnamon powder
– 1/4 tsp Ginger powder
– 1/4 tsp Nutmeg
– A pinch of Salt

MUSHROOMS STUFFING

– 1 tbsp Coconut Oil
– 1 large Onion
– 4 or 5 Celery branches
– 2 medium Carrots
– 2 Fennel shells
– 250 gr Mushrooms
– 1/4 cup peeled Lentils
– 2 Vegetable Cubes youtu.be/_TE1EgKM1r0
– 1/2 cup Water
– 4 Garlic cloves
– 1/4 tsp Nutmeg
– 1/2 tsp Sage
– Salt and Pepper at taste

PUMPKIN STUFFING PROCEDURE

– Put the pumpkin in a processor so you can obtain a more even mixture
– Add 1/4 of vegetable milk (almonds)
– Add cinnamon, ginger and nutmeg
– Let it cook for a few minutes to eliminate the water excess
– Now, add garlic powder and vegan butter
– When the mashed pumpkin is ready add salt at taste
– Reserve

BLUEBERRIES STUFFING PROCEDURE

– Put a cup of blueberries on a cooking pot
– Add 1/2 cup of mashed apple
– Add a sliced in small pieces apple
– Let it cook for about 5 minutes
– Put water, cinnamon, ginger, nutmeg, and a pinch of salt
– When the water has evaporated turn off the heat
– Reserve

MUSHROOMS STUFFING PROCEDURE

– Stir-fry a large minced onion until it’s translucent
– Add celery and carrots and let it cook for 5 minutes
– Add minced Fennel and mushrooms and let it cook for 10 minutes
– Add 2 vegetable cubes, 1/2 cup of water, and 4 garlic cloves
– When the water evaporates we can add the cornstarch dissolved in water
– Let it cook for about 5 minutes and then turn off the heat
– Reserve

– As soon as all the stuffings have cooled down we may set our roast.
– Enjoy!
